Ingredients

  • 1 tablespoon Capers, drained and rinsed
  • 1 Garlic, crushed
  • 1/2 Lemon, zested
  • 2 tablespoons Olive oil
  • Salt and pepper
  • 1 Tomato, deseeded and julienne
  • 2 smalls zucchini, peeled into strips

Cooking Instructions


Step 1

  • Toss the zucchini strips with the oil, lemon zest and juice, garlic, salt and pepper. Set aside for 30 minutes to marinate.Divide between 2-3 plates and top with capers, tomato julienne.
